Ingredient List

10 Courgettes (chopped into large chunks)

250g Smoked Cheddar (grated)

6 Red onions (chopped into large chunks)

25g Pecorino (grated)

5 sprigs Thyme

250g Tomato passata

6 Garlic (whole cloves, peeled) 

500g Lasagne sheets

900ml Milk

75g Plain flour

75g Butter

Salt & Pepper

Olive oil

A bottle of Fresh Tendrils

 

Method

Preheat the oven to 170C fan

Toss the courgettes, red onion, thyme & garlic together with a generous amount of olive oil & a nice pinch of salt & roast, covered with foil in the tray you intend to make the lasagne in, keeping the contents of the tray moving regularly. It will take 30–40 minutes in total

Make the cheese sauce. Bring the milk up to the simmer. In a separate pan melt the butter & add the flour. Cook this until the mixture is golden brown & thick. Around 3 minutes

Start adding the hot milk little by little, ensuring it is fully incorporated after each mix. This will ensure a smooth sauce without lumps!

When the milk has been added & the resulting sauce is thick & smooth, season with salt & pepper & add 200g of the smoked cheddar. Combine well, cover & reserve

Separate out a ¼ of the cheese sauce before you begin building the lasagne. This will ensure you have enough for the top!

Uncover the roasted vegetables & add the passata. Mix it together well & replace in the oven for 10–15 minutes. You will be left with a deep red courgette ragu

Remove from the tray any thyme stalks, as well as ¾ of the courgette mix. Spread the remaining mix evenly on the base of the dish 

To that add ¼ of the cheese sauce & a generous drizzle of Fresh Tendrils. Top with a layer of pasta sheets

Repeat this step three times, or for the remainder of courgette ragu & cheese sauce

When you are left with the top layer of pasta, spread evenly with the reserved cheese sauce, sprinkle with the remaining smoked cheddar & the pecorino

Bake at 170C for 45 minutes until evenly coloured & bubbling. This will be ‘hotter than the sun’ for at least 10 minutes, so prepare a green salad & any other accompaniments you deem appropriate, like more Fresh Tendrils for example & dig in.
