Ingredient List

150g Salmon (Skinned & fresh as possible / sashimi grade)

1 large shallot (finely diced)

25g Mayonnaise

25g Crème Fraiche

25g Creamed horseradish

1 tsp capers (chopped)

1 tsp cornichons (chopped)

½ tsp fresh lemon zest

A bottle of Fresh Tendrils

 

Method

Combine the mayo, crème fraiche & creamed horseradish 

Dice the salmon, reasonably small & evenly, around 8mm cubes & season with a little salt & black pepper

Mix the diced salmon with the dressing & add the capers, cornichon & lemon zest

Place in a ceramic bowl, just off centre & add Fresh Tendrils to taste
