Salmon Piri-Piri, Broccolini, Lemon & Capers

Ingredient List

500g piece of Salmon (preferably centre cut & skinned)

200g Broccolini 

1 unwaxed Lemon (Amalfi is best as they have a nice balance of acidity / less bitterness)

2 tsp Capers (Nonpareille or Lilliput)

50ml Dry white wine or Cider

2 Shallots, finely sliced

Pinch of fresh parsley & basil

Extra virgin olive oil (best quality for finishing)

100ml My Wave

 

Method

Cut the lemon into quarters lengthways & slice two quarters as thinly as possible, discarding any pips you might come across

Add the broccolini, lemon & capers to the shallots & place the salmon on top

Douse the salmon in My Wave (50ml should be sufficient) & add the white wine, covering immediately, so the fish & its accompaniments begin to steam

The fish should take no more than 5 minutes to cook before you remove from the heat & leave it all to rest for a moment

Sprinkle the pan with the herbs & a generous drizzle of a good olive oil. Divide the Salmon into two & serve with its fresh & zinging garnish!
